saffron onion omelet with balsamic vinegar

1 Heat the olive oil. Add the onions and cook until they are soft and golden.
2 Add saffron solved in water and let it evaporate. Cook until onions are orange.
3 whisk eggs with salt, pepper and a very little bit of parmigiano.
4 add the eggs and cook both sides 
5 serve with balsamic vinegar glaze
